Deproteinized whey is produced from sweet dairy whey by means of ultra-filtration. This product has a clean flavor, with no objectionable off-flavor. It consists of 3.6% protein, a maximum of 4.5% moisture, 83.0% lactose, 0.2% fat, 8.4% ash, 0.12 titratable acidity, and pH value of 6.0. The actual shelf life of extra grade deproteinized whey will vary based on actual storage temperature.
