Infat 102 is an interesterified and hydrogenated lauric oil fraction. Its excellent hardness, good flavor release, mouth feel and melting characteristics make it ideal for high quality profile confectionery fats. This product is excellent as a chocolate coating fat and may be used in other confectionery products. In cooler climates, it can be used as a molding fat.
