One g is soluble in 2 mL of water, in 75 mL of alcohol, and in 50 mL of 90% alcohol. An aqueous solution is slightly alkaline with a pH of about 8. Applications: preservative and anti microbial agent for tomato products, pickles, sauces, fruits, fruit salads, jams, cider, fruit juices, salad dressing, and some meat and poultry products.
