It gradually darkens on exposure to light, is reasonably stable in air when dry, but rapidly oxidizes in solution in presence of air. Applications: ascorbic acid, popularly known as vitamin c or l-ascorbic acid is utilized as an antioxidant, nutrient, and preservative. Commonly used in beverage, fruit products, flour products, dairy products, wine, beer, fish, meat binding, and pickling. 收起

Since 1948, this antioxidant has been added to foods containing oils and fats to prevent oxidation. As a food additive, it is used under the E number E310. Propyl gallate is an anti-oxidant. It protects against oxidation by hydrogen peroxide and oxygen free radicals. Propyl gallate is used to protect oils and fats in products from oxidation. It is used in foods, cosmetics, hair products, adhesives, and lubricants. 收起

The molecular formula of this chemical compound is C6H7NaO6. As the sodium salt of ascorbic acid, it is known as a mineral ascorbate. It has not been demonstrated to be more bioavailable than any other form of vitamin C supplement. Sodium ascorbate normally provides 131 mg of sodium per 1,000 mg of ascorbic acid (1,000 mg of sodium ascorbate contains 889 mg of ascorbic acid and 111 mg of sodium). As a food additive, it has the E number E301 and is used as an antioxidant and an acidity regulator. It is approved for use as a food additive in the EU, USA, and Australia and New Zealand. 收起
