In a person, for example, it is an important part of producing energy for strenuous exercise and helps with certain liver functions. During extremely intense exercise, it can buildup to excess and cause short-term burning sensations in muscles. This acid can also be found in certain dairy products, such as yogurt, as well as sourdough breads and some beers and wines as a result of fermentation. 收起

Specifically, it is the crystalline salt of sorbic acid, also a food preservative. It is used to preserve such foods as cheese, wine, meats and dried fruits. It also helps inhibit the growth of yeast and mold in some herbal supplements and many cosmetic and personal care items, extending shelf life. Having a toxicity level comparable to table salt, it is generally considered safe for consumption; side effects are very rare but may include mild allergic reactions or nausea. 收起

Sodium benzoate is a common ingredient in highly processed foods such as carbonated sodas, vinegar, fruit juices; in mixed ingredients like salad dressings; and to stop the fermentation process in wines. The U.S. Food and Drug Administration (FDA) and the Health Protection Branch in Canada (HPB) report that in low doses it is safe for consumption, currently the FDA permits a maximum of 0.1% benzoate in foods. On its own, it is not considered toxic, and studies show no adverse health effects in humans under normal conditions. 收起
