Gluconic Acid

Gluconic Acid is composed of an equilibrium mixture of gluconic acid and the gamma and delta lactones. It occurs as a light yellow liquid with a slight acetic odor. Gluconic Acid is used as a chelating agent in the food industry for cheese/tofu, meat, pasta/rice, and salad dressings/sauces.
