Water dessert gels can be made without gelatin by using Carrageenans as the gelling agent. An advantage of this is that prepared gels can have a very long shelf life and are stable at fairly high temperatures. Fish gels and aspics can be made quickly and inexpensively using Carrageenans. Many gel-type candies formerly made with Agar are now using Carrageenans as a total or partial replacement for Agar. Because of its relative stability to heat, acidity, and aging, Tragacanth is widely used as a thickener and stabilizer in pourable salad dressings of the regular and low calorie types. For similar reasons, it is used in relish sauces, condiment bases, sweet pickles, liquors, and mayonnaise. It is used at about 0.4–0.75% in the above products. Tragacanth provides clarity and brilliance to frozen pie fillings and toppings in which suspended fruit, fruit purees and flavors are used. It is used in speeding the coagulation of cheese curds, and slows and thickens the melting of ice cream. When used with cake and biscuit dough, Locust Bean gives a higher yield with a considerable reduction in the amount of eggs necessary. Also, the cakes are softer, have a longer shelf life, firmer texture, can be easily removed from the pans and can be cut or sliced more easily. About 1-2% Locust Bean Gum is used in fruit pie fillings to yield a clearer, more fruit-like filling, which is more palatable and does not mask the flavor. Locust Bean Gum, in combination with other hydrocolloids, stabilizes a variety of prepared foods as instant dry sauces and soups, frozen concentrated soups and frozen butter and cheese sauces for vegetable and fish dishes. This gum also stabilizes and thickens mayonnaise, tomato catsup, and natural as well as imitation whipped cream. view less
