Calcium Ascorbate is the the calcium salt of ascorbic acid. It is mainly used to keep fruits and vegetables fresh and is used as a coating for the food. It is slightly white or yellow and is odorless. It can also be used in calcium fortification. It works upon ingestion and has a pH between 6.8 and 7.4 when in a 10% solution.
